My uncle really wants to enjoy my beer, but his allergies flare up whenever he drinks microbrews, and it gets worse the hoppier they are. Basically, he can only tolerate lighter lagers well, and Red Stripe is his go to.

I'm curious if anyone has any suggestions about recipes/ingredients that I should try to utilize. Basically, i'm currently leaning towards a blond of some kind, with a minimal hop profile.

While I prefer and have experience with ales, I can definitely lager as well, as I have a Spike Brewing CF15 with the chill coil.

Any thoughts?
 
I've never heard of anyone being allergic to hops. That's a bummer.

Don't forget about unhopped (or minimally hopped) beers like sours and gruits.
 
Hefeweizens hardly have any hops in them. Also check out biermunchers Centennial blond one of the best and most used recipes on HBT.

It might also be a freshness thing. Homebrew tends to be very fresh with hop matter etc compared to Jamaican import that's been sitting around for months.
 
Just looked at biermunchers centennial blonde recipe, and it ticks a few boxes for me (cheap with fast turnaround, etc...)

Will definitely try it out
