All late hopped APA what'd ya think?

This is the first all late hopped apa I have ever planed to try. I'd love to know what people think since I'm in experienced with the whole thing. Here's the plan:

all grain
11 gallon batch size
72% efficiency
single infusion mash 60 min at 152, fly sparge
60 min boil
original gravity 1.057
final gravity 1.014
40 IBU
yeast denny's favorite fermented in the low 60's
ABV 5.7
SRM 6.4

17lbs 2 row
4lbs Vienna
1.5 lbs Crystal 20
1 lb Victory
.5 lb wheat malt

1 oz Simcoe 30min
1 oz Mt Hood 20 min
1 oz Mt Hood 15 min
1 oz Simcoe 15 min
1 oz Mt Hood 10 min
1 oz Simcoe 5 min
1 oz Centennial 0 min
2 oz Centennial dry hop
That's 3 oz each of Simcoe, Mt Hood, and Centennial!

I want a nice, clean, hop forward, smooth APA. Sound like I'll hit the mark?
 
30 minutes isn't really late-hopping. It's sort of a no-man's-land where you've lost most of the flavor without gaining all the bitterness. So maybe you could put 1/2 an ounce of simcoe in at 60 and the other 1/2 oz as a dry-hop.
 
You don't want a 30 min hop in a hop burst beer, and you certainly don't want a 60 min. addition. If you want to do a hybrid of sorts you could try FWH addition, but I don't think that fits with your quest. I like to do a blend of all the hops and add that blend at each addition starting at 20 minutes, the 0 min addition is added once wort is cooled to 190F and held for 15 min.
 
Okay I gotcha. Hows this, lowered and moved the Simcoe to 20min and added Centennial in at 10 and 15 to get some into the boil plus to keep my IBU's near 40. I wasn't clear about the 0 min additions, they will be boiled 0 min and held hot (like 190) for 15 min as you said. I hop this turns out okay...

Yeah that looks fine. However, I overlooked the Mt Hood, I typically use is for bittering as its pretty flavor neutral. Maybe lose it and add more simcoe and centennial. What I was describing with the last addition of hops is that it won't be added until the wort is cooled to 190F, it's allowed to steep at that temp for 15 minutes then cooled quickly to pitching temps. It's funny you write that because as I was shuffling things around I was wondering if the Mt Hood would get lost. I only have 3oz of Simcoe left so maybe I'll toss the Mt Hood and add in more Centennial?

This is all the Simcoe and Centennial I have. It puts my IBU's at 34.
I'm thinking of tossing .5 oz of Mt Hood in at 60 min just to bring up the bitterness to 39.
