I'm new to brewing and bought a lager kit not realizing that I don't have a way to lager beer at low temperature. I don't want the kit to go to waste so I was wondering if I could substitute the dry lager yeast with an XL 1007 GERMAN ALE YEAST smack pack. Will this produce a good tasting beer or would I be wasting my time? Here are the ingredients in the lager kit that I have:
5 lbs. of Canadian light syrup
2 lbs. of English malt syrup
2 lbs. Bonlander malt
1.5 oz. Hallertau hop pellets (thinking of increasing to 3.5 oz?)
1 packet of Saflager lager yeast (would like to use ale yeast here)
3/4 cup priming sugar
