Hi All.. Just ordered a Sol Cerveza Clone from Adventures in Home-brewing... This is an extract kit that I have not brewed before.. Was thinking about doing a starter with WLP940 Mexican Lager.. Still wondering how to increase ABV without making a big change in taste.. Plan on setting the ferment chamber to the low 60's.. After its All finished.. will be going to the keg.. Just curious if anybody has brewed this kit before?? Just looking for some advice before the fun begins...

I like WLP940 but I think low sixties is too hot. 50F-55F fermentation temps are better. If you can, set the chamber to 48F or so and let it warm up as fermentation slows. 60F maybe fine for the starter but not the beer.
 
Thanks Malticulous.. You are right.. This yeast does need a much lower temp than the 60's I will set the chamber to 48... What pitching temperature would you aim for?
 
Yeah... I have two vials of the yeast ready for pickup at the LHBS I plan om using both... So will this brew require lagering? with the low temps etc..
 
Two vials into a good size starter will work well. It could be ready to lager in less than two weeks. And yes it will probably need six weeks at fridge temps before it's ready.
 
2000ml flask... on a stir plate =) Have Wyeast yeast nutrient... plan to add some of that also... will 1/4 tsp be sufficient with two vials?
