I kegged a couple brews about 2 weeks ago, put them in the kegerator and carbed them up. I can tell that they are still "young" and not up to par yet. Should I remove them from the kegerator and get them back down to 70 degrees to let them continue aging, or should I just keep them in the kegerator at this point for another couple weeks? One is a stout and the other is an IPA.
