I have read through hundreds of posts on agave and see that it has been used extensively in wheat beers and some lagers. However, I was thinking about using it in place of Belgian candi syrup in a tripel. The recipe calls for 1.5# of candi syrup. Would I do a 1 to 1 conversion? I have read that agave can add a drier taste, do you think that would be the case here as well?

I'd go ahead and give it a shot. I've used it in a few beers and could definitely taste its presence a little. Might be best to find a couple agave beers and make sure that's what you're looking for. Otherwise table sugar usually works just fine.

I have used all sorts of different sugars in my Belgian brews but never have tried agave. It should work just fine. If agave does give a drier taste then it should be great for a tripel.

If you do brew it with agave I would be interested in hearing the results.
