AG experiment, diluting to fairly low OG, will it taste bad?

Hi,

So, I have some leftover grain from a previous batch, and I want to do a small batch, like 2-2.5 gallons to use it up.

77% Pale 2 row
15.5% Munich
7.5% Carapils
Have some leftover Cascade and Willamette as well.
Yeast is US-05, currently winding down a re-fed starter.

I'm thinking about doing a stove top BIAB. My calculator says I should be able to get a 3 gallon boil, down to 2 gallons in the primary at 1.045.

Using this handy dandy calculator, adding about 1/2 gallon of (boiled/cooled) water should drop the OG to 1.035, resulting in quite a low ABV end product. I will calc actual additions after knowing actual OG.

Question: Would that taste like watered down pee? What I'm looking for is a low ABV summer beer that won't taste like crap. A basic no frills pale ale, saison type thing.

Should I throw some oats or something it to get a little more body?
With a low ABV, should I ferment at a higher temp to try to get some fruity esters in there? or would the higher alcohols dominate and taste like gasoline?

This is just an experiment, if it's a flusher so be it. I'd rather make something drinkable, but I like to play.
