Last weekend, brewed 25 gallons of Centennial blonde. This is the first time I have aimed for that volume and I found the burner had a hard time keeping it rolling. Everything went well, except the boil-off. It was moving, but while I was aiming for 27 gallons post boil, I ended up with closer to 31. I missed target OG by 20 points! This includes a sugar addition late in the boil because I suspected this was going to happen. Pitched Nottingham. Now, a week later, it's gone from 1.035 to 1.008. It will hopefully still be a decent lawnmower beer. But it's still a bit cloudy, and quite lacking in flavor. A bit of DMS, as well.

So, I was thinking of dry hopping it with an ounce of Centennial in each fermenter. Hopefully mask the DMS a bit and make it a bit more enjoyable.

Thoughts?
