They do recommend a max of 5% in a beer. Most of my uses of it have been between 2% and 5%. I'd hardly imagine you could "lose all flavor" from a percentage that low unless it was the only dark malt you were using, but then that'd be an issue in itself.Right, I do understand that's the idea, I just remember it sort of losing all the flavor. That said I may have also changed the amount some, or tweaked some other recipe ingredient, or even just something like fermented at a different temperature, any of which would also have made changes I unfairly attributed to the Carafa. I'll have to try it again.

On their chart, they give it a 4/5 for "coffee," a 3/5 for "cacao," a 3.2/5 for "dark chocolate," a 3/5 for "bready." I do remember the first time I used it, thinking that it had a flavor and aroma much milder than its color would suggest, but it was definitely there.
