Hello, I did a batch of lambic wannabe but my final gravity was rather low after primary fermentation (1.002). In attempt to put smth in the secondary for bugs to chew on I added grained unmalted wheat and some wheat flakes (without doing any mash). So my question would be> did I actually put some sugars in there that they could use or I should have done a mini turbid mash first?
There is no airlock activity whatsoever but the beer is doing fine. Maybe it's not that strong in the lambic character department but it has been in the secondary for only 4.5 months. Thanks
 
Technicality you added sugar. The problem as I understand it would be that you added them in the form of complex carbohydrates. You would have needed to mash them to make sugar available for most of the stuff in your wort. AFAIK, Brett can only break down stuff up to 9 molecules long..I'd Just be guessing as far as what you've thrown in there.

Plus side, you probably added more lacto to your beer. Any mash would have been better than no mash, turbid or not. I know they talk about turbid mash as a traditional component of lambic in "brew like a monk", just don't remember if it was necessarily required..I've been making good sours without it for years. Just my .02 of course.
 
You can add whole wheat pasta. Seriously. I did this in the past with great results. You can also boil up some maltodextrin and pour that in as an additional source of food for your microbes.
