My youngest son (turns 21 in a week) wanted to brew with me the other day. He wanted to do a wit with grape juice added. I looked around on HBT and found a thread on DFH Midas Touch where they were talking about adding the juice into the fermenter just after krausen had finished. I thought that would be a good plan. We brewed up a batch of 50/50 Cal select to Wheat malt and used White Labs Wit, don't remember the # right now. After about four days I thought it would be time to put the grape juice into the fermenter, so we dumped a gallon of unsweetened purple GJ into the fermenter and gave it a good shake. In the morning there was purple beer/wine splatter all over the place, should not have used an air lock, but a blow off tube for this one. It has been in primary for about a week since adding the juice and still bubbling occasionally. I plan to bottle this bad boy as the ABV will likely be in the 11% range and I don't put those on tap (too dangerous). I'll post again when I bottle/taste this, but I would love to hear from other brewers who have done similar experiments. Thanks
