Added DME just after pitch due to screwup..is it toast?

TIFU by forgetting to add 3lbs light DME to my beer. Recipe called for it to be added after flame-out at the end of the boil. I measured after cooling, pitching, and stirring and realised I was barely at 1.030. Recipe OG target is 1.063. My heart sank.

Cant re-heat without killing the yeast, it's 10pm so the local brewshop is
closed. I panicked and immediately tossed in the DME at 68* and stirred like a madman for about 5mins. I was able to get the gravity up to 1.048, still was short of my target.

She's sealed now and in the cooler.
Nothing to do now but wait I presume.

My big questions are:
-Was I right to add the DME?
-Is this batch f#$&ed?
-And the most complicated question: If I had boiled the 3lbs DME in an extra gallon of water and cooled it/added it, would I still likely be at the same 1.048 gravity given that the batch was already at 5gal? I'm still a novice at calculations.

You were right to add the DME, i think the batch will be fine, a little bit short to the target og but still better than without adding anything. You could still boil, cool and then add more DME if you want the beer to be stronger. What was the original recipe?
 
Was this a partial mash or all extract recipe? You had very poor efficiency with your mash if this was a partial mash and your volume in the fermentor was correct. With an all extract recipe the three pounds of DME was not thoroughly mixed into solution yet when you took the second SG sample. The yeast will take care of the mixing when fermentation begins.

I did the partial mash at 3gal/160* and made efforts to break dough balls. I was able to add the initial 2lbs DME but just forgot the final 3lbs after flame-out.

I'm likely going to go all-grain after this. Makes the process simpler imo; I hate having to reignite my flame after adding batches of liquid/dry malts. Just have to get a bigger kettle, currently I'm using an 8g aluminum turkey fryer pot so I'd have to be super on point with that hot break.

Just put it back in the boil pot. Reboil for a few mins. Cool to pitching temps add to the fermenter and seal it until you have the yeast.
I usually just put some plastic wrap under the plug and it's fine.
As long as you are practicing good sanitization then you should have no issues.

1) Adding the DME without boiling it could possibly cause an issue but probably not.
2) No the batch is not F'ed up.
3) Instead of boiling 3 extra gallons... If you don't want to do what I recommend above, just boil 1 gallon or a 1/2 gal. Just enough to dissolve it and get it boiled for 10 mins.
Then dump that in. Why would you need 3 extra gallons?
You would even need to cool it the whole way down. Just enough till it's really warm. Then dump it in. If you are only adding 1/2gal then the ambient cool wort with cool this down quickly.
