Dearest homebrewers, I recently brewed my second extract batch. My goal was to brew a half batch (2.5 gallons) of a nice hoppy IPA. I neglected however to top off after the boil and ended up with 1.5 gallons of wort in my fermenter. Before I realized this, I cooled my wort and pitched 1 packet of safale us-05. My OG ended up being 1.089.

Did I accidentally make a DIPA? :drunk: Or some low attenuated hop syrup? RDWHAHB? Thank you!

recipe specifics:
3.3 lbs munton's lme
1/4 lb carapils
1/4 lb crystal
2 oz centennial pellets
1 pack safale us-05
60 minute boil

I don't see any reason you can't top up with cool, sterile water now. How long since you pitched the yeast?

Umm it has been fermenting for 4 days.... I wasn't planning on taking another reading until I racked to the secondary.

I'd say let it ride then dry hop with another ounce of Centennials when you rack to secondary. It will be stronger than you intended, but is that necessarily bad?

At this point, I'd be afraid to mess around with it too much. (though part of me thinks there shouldn't be a problem adding a gallon of sterile water into a secondary and then racking the beer on top of it)

Okay thanks guys! I like the dry hopping, I have some Amarillo which I'll try. I thought about adding extra water to my priming solution, but I think I'll just keep it as is. :)
