Brewed Imperial Bastard Stout this past Sunday.
After a 2 day lag, fermentation took off like a rocket. I had a blow off tube, and it still blew the bucket lid off.
It happened while I was at work, and SWMBO had the mess cleaned by the time I got home, so no carnage pics.
I got home to survey the damage... The blow off tube wasn't clogged, so I cleaned and resanitized the lid and tube, and put it back on the bucket. No more than 2 minutes later, I hear the lid hissing. The blowoff is bubbling, and apparently fermentation is so vigorous that I can't even put the lid on tight. Need a bigger blow off tube, I guess.
Looks like I'll be testing the "loose lid" fermentation method for a couple of days.
Between the sight glass on my kettle breaking (and the associated mess), and now this, I'm calling my version of this beer "Kitchen Destruction Stout."
