I recently was given some chimay for my birthday. Really enjoyed them and wanted to brew similar style beers. i know from reading that dubbles and tripels need time. What is the difference between aging in carboy and in bottles. Should I be doing a little of both or can I leave beer longer in carboy then enjoy in bottle after its carbed

It's an either or thing. Bottle aging is perfectly acceptable. I keg so all my aging is done in carboys.

Either way is fine. Some say that bulk aging is move even, and takes a little less time, but bottle aging is perfectly fine.

Either way, a beer like anything Chimay brews is going to need serious age before it reaches its potential.
