I only got 3 pounds of plums from my tree. Not even enough for a gallon of wine. Am thinking of doing the plums with 3 pounds of Concord grapes to do a port style of wine. This a good idea? Any pointers?
 
Have you considered doing a melomel, adding some honey and your plums together to make a mead? How many pounds of plums do your usually add to a gallon? WVMJ
 
Would like to use 4# per gallon. The melomel is a great idea as well. My next batch of wine I plan on doing a 5 gallon blackberry melomel. About 9 mo ago I did a 1 gallon of the blackberry. I just bottled it. At bottling it tasted wonderful. Can't wait to fast it in a year or so! Should turn into gold by then. That's why I am doing another 5 gallons.
