So, aside from my "I'm new here" post this is my first thread. For the past few months I have been searching and reading and reading and searching... and a little more reading. Anyways I wanted to say THANK YOU to the entire forum. To you seasoned vets I appreciate your patience and kind words of encouragement and to the noobs I thank you for asking the questions that we are all thinking but some of us (me) are to chicken to ask. I am saying all of this because I just popped a cap off a bottle of my 3rd brew and it TASTES LIKE BEER!!!!!!! Not just beer but GOOD BEER! My first brew tasted like plastic and I was hoping it would mellow with a little extra bottle conditioning (no such luck) and my second brew tasted better but still not quite beerish and it has a diet cola type mouth feel (not really sure how else to explain that). So you all know it is an Irish Red Ale that I brewed for St. Patty's day and it works as intended! (lil buzzed already). As you can see in the photo it has no head and it is perhaps a little darker than most reds but the taste is malty and a little sweet. So anyways before I ramble excessively I really appreciate all the help this site has given me and I hope I have many more brews to share with you!

That red probably just needs a couple more weeks in the bottle at room temps to carb & condition more. Then a week in the fridge & your good. Welcome to your new obsession!
