I was digging around in my fathers basement and found this.
He had made this from his own grapevines around 8-10 years earlier.

Was wondering if it would be safe to try, I smelt it and it smelled very nice.

What should I do with it? I have bottles and corks and sanitizer.

Try it man! Could be awesome or complete **** but you'll never know till you try!
 
My biggest concern would be oxidation depending on what was in the headspace of that carboy. Are you sure there was yeast in there and it truly is wine? Good luck! I'd say try and and then decide to bottle or not.
 
I'm taking it the air-lock was dry, but regardless, I'd take the wine thief and see what it taste like. What if it's great?!
 
Looks like its been completely oxidized and is possibly vinegar by now with that stuff floating on top. Of course take a couple of tastes, if its like burnt raisins then its oxidized, if its vinegar and tastes good put it in a gallon jug and enjoy. Was this like your dads last batch he made or just one that got forgotten under the stairs? Clean out that carboy good, maybe even hit it after the last cleaning with some iodophore to kill off any vinegar bugs. WVMJ
 
8-10 years with a dry airlock its for sure going to be oxidized/vinegar.
 
It may be drinkable, if it hasn't turned to vinegar it will at most be an oxidized dry wine.
 
Will be trying it tonight!


Had to get a new siphon hose, the one I had was disgusting. (Sat on basement ground for a decade haha)

I will let you all know how it tastes tonight or tomorrow!

Id drink it, but id have a shot of tequila on hand to make sure everything would be okay lol.
 
From the pics it looks like a nice formation of acetobacter have taken hold. Probably really good vinegar though, I keep a small jug of vinegar/mother to pour old bottles of unused/not drank wine into, it's developing nicely.

I would think the same. Its probably some pretty great vinegar! I would keep a good chunk of it for sure
 
Just sampled it.

Tasted like it had 3% alcohol, almost sweet but then slightly vinegary.

Not to extreme in any specific flavor, almost reminds me of the taste of cooking wine (the stuff with the salt added)

You should definitely cook something with it, and then tell us all about it.
