Hey all-
Just bottled my first hefeweizen. Looked awesome, the sample I tasted was great... very excited about it. My OG was 1.053. When I checked the FG, it was 1.007. First off, I've never gotten a FG that low. Second- that is 87% attenuation! Is this crazy? I used Wyeast 3068 and left it in primary for 3 weeks... no secondary. I fermented in the low 60s for the first five days or so... then let it get up to the high 60s once airlock activity was slow. Has anyone else seen this level of attenuation from 3068? The Wyeast website says to expect 73 to 77%.
