I've got a window of about 8 months. I would love to build a beer to age during that time frame.

I've done aged barley wines, Imperial Stouts, Imperial Reds and a few sour and brett projects.

I'm looking for people's experiences with successful aging of beers - whatever you've done that really worked well. I can do bottle, keg or fermenter aging - I've got enough capacity to do any of those options. I'm willing to go sour or funky but I'm also willing to keep it basic.

Suggestions? Stories about success or abject failure?

No story. Just do a Sierra Nevada Bigfoot Barley Wine.

I'm looking to brew an Imperial Bourbon Chocolate Coffee Stout that I figure I'll let age for 6 months before drinking. I should have brewed it 6 months ago!
