I brewed a 5 gallon Irish Stout Extract kit about 5 days ago and today while checking the temperature on it, I realized that I accidentally filled the carboy up to the 6 gallon mark instead of the 5. I was hoping to have this ready for St. Patty's weekend. Is there anything I can do to help this? I already searched and read about possible head retention and less ABV, anything else I should worry about? Will it taste somewhat decent?
 
Many traditional irish stouts are fairly low in alcohol, so if yours is one of these (estimated ~4ish% ABV, the extra volume will make it quite low, and possibly thin.

If, however, you pumped up the ABV like many do when making a stout (6+% ABV) then you'll be fine and end up with a nice 5ish% ABV. Your color may also suffer slightly, regardless, but it shouldn't be drastic. Any of the good brewing softwares should be able to give you estimates.
 
If you are inclined to worry about this through the entire fermentation, you could go to your LHBS and buy a pound of dark DME. Boil it up in a quart of water, cool, and pitch into the beer.

You run a number of risks this way, including the possibility that your recipe will end up even more out of whack.

Probably best just to accept it as a learning experience, through which you ended up with more beer, plus you can brag to your friends that you invented a new style of beer - 'Slim' instead of 'Stout'.
