I have been making cider in 1 gallon glass and plastic bottles for the past few months (with success, thanks to this group). If I want to make it in a 5 gallon carboy, is it the same process and just multiply everything by 5 (sugar, yeast, nutrient, etc). How much head space should be left between the top of my juice and the airlock?
 
Yep - Everything is scalable - Except the yeast, a single 5 - 10 gram packet of dry yeast is adequate as a single packet in a gallon is a bit of overkill. Again, not a problem adding more (to a point) just not really needed.

Amount of headspace needed depends on how active your ferment is. If you fill to just an inch or so below the "Shoulder" of the carboy you most often will be fine.
