So I have a wine kit that is supposed to make a full 6 gallons, but according to almost every single review it comes out to watery and I should make it at 5 gallons instead. I'm not worried about the primary fermentation as the Co2 will be in the headspace, but when I rack it into the 6 gallon carboy for the secondary is that going to cause me any problems? What about after I've had to open it again, clear it, and it still has to sit for a few weeks? I really don't want to buy a 5 gallon carboy just for this one batch.

Thanks!

Won't be a problem, in secondary it is still fermenting so not an issue.

And after you clear it, it will be degassing at that point and forcing any oxygen out the airlock.

So just keep the bung tight and keep water on the airlock and you will not have any issues.
