5 gal for 1

Some time ago we bought a wine making kit. This came with a 5 gal carboy and 5 gal bucket. I don't have the storage or cooking space for 5 gal of beer. This sounds like a dumb question, but can I brew a 1 or 2 gal batch with my 5 gal stuff?

I do 2 1/2 gallon batches in my 6 1/2 gallon bucket fermenter with good results.
