I recently made a starter,200ml og 1.020 for the first step.
I let it sit for 3-4 weeks and then repeated.
It had some wild activity and the second step still has krausen after a week and a hlaf(dirty looking).

It smells funky and there is some acidity on the nose also.
After a taste,it was lightly tart with some Brett,but the funk level on the nose is wicked(in a "I am not sure if I like it or not" kind of way), to the point of being a little off putting.

Anyone stepped up 3F dregs before?

I was looking to pitching them with a mix of Wallonian Farmhouse,Belle Saison and Lacto Brevis,all from day one.
 
I have a 3F bottle that I'm about to drink and save the dregs from. I was thinking about adding Cascade and RR dregs, but I might keep it strictly 3F after Mike's recommendation.
 
I will be having a Mariage Parfait tonight,dregs of which will go into a starter.
Migggghhhhtttttt throw them into the same brew
 
Smells a lot cleaner now,the funk being more pleasing and subdued.
It was very clear 'til I picked it up,disturbing flotsam and jetsam,causing cloudiness.
My feeling of trepidation is soothed

I have some of the Cascade Lacto,got it in a swap.
I is very good indeed. There has been talk as to the possibility of some Brett having gotten in there also.

I guess I should have said cascade only uses lacto. The barrels might allow for some Brett. So not sure how much or little if at all is in their beer.
 
Fyi, Cascade is pure lacto

Cascade only ADDS lacto (besides fermenting with a "belgian" primary strain) but people have plated out brett on several of their beers. Almost certainly a result from various bugs/yeast on the skins of the copious amounts of fruit they add. But their strain of lacto is insane. Great stuff
 
It will go 7-8 without any effort on your part.
Give it some TLC, you get 9-heartburn.

So while I never think $30 is a good price for a beer, it makes it tempting to spring for one of the cascades just to get that strain of lacto.
 
Hey,you are lucky to have the option of getting the beer to go with the lacto.
Not very probable that my local shop in Chiang mai have a bottle or two,lol.
 
I really like the performance of the cascade lacto when pitched alongside other dregs. It is a really nice hop tolerant strain, IME.
 
Well sure, but I can also make 11 gallons of something really nice for the same $30 I would spend on 1 750ml bottle.

That said I think a hop tolerant strain that reliable sours is probably worth it.
 
Sure.
Better to go with a proven performer,than be let down by a maybe.
My Cascade lacto is going in alongside the 3F dregs and two Saison strains.
Something about the lacto and dry hops- it seemd to hold the flavour and aroma in the beer for so much longer than usual.
