I bought and milled my grains for a Flanders Red 3 weeks ago but, life happened. The grain has been in a plastic bag, sealed with a twist tie sitting at room temp (about 74F). I know the grain can still be used, but are there any risks with using these grains since this beer will ferment for about a year?

My other option would be to use the grain and just pitch some Irish Ale yeast so if it comes out with any stale flavors I wont have a year invested in a disappointment, but I would rather brew the Flanders..

Brew it...

Commercial breweries often order their grain pre-milled and regularly sits for a bit longer than yours before getting the 'beer treatment'. Assuming you have stored it in a temperate environment, it should be just fine.
