3 stage mash

After the boo boo I made with my first AG I figured I'd odify my technique a bit. Going for an Oatmeal Wheat Ale

1 gallon batch

1.5 lb Wheat Malt
1.25 lb 2-row breiss pale barley malt
.25lb Carmel Malt 20L
.25lb Rolled Oats Toasted

.5oz Fuggles 3.8AA

1 packet muntons ale yeast

I want to go with a 3 stage mash for maximum efficency

20 min at 105
20 min at 135-140
40 min at 155

1 hour boil to carmelize the wort a bit.

Let me know what you think about this, and is the 3 stage mash even worth it.
