It's been proven these beers keep well. If you have multiples and can try one fresh and stash the other, nothing wrong saving them for a special event. And by special event I mean forcing my girlfriend to help me drink five bottles of saison in one night.

I'm down to my last few "RUSTIC" capped bottles and it's taken some good will power to hang on to them for this long. I'm thinking of opening my last batch five Cask 200 on 5/15/17, exactly two years after it was released.

Oh, do they not agree? I would never hold onto anything fruited for more than a few months.
Tim thinks that pretty much every beer should be consumed within a year, and when they release a beer it's already at its best.

Personally I don't really get non-incidental (ie, "I buy too much beer") aging of Sante, at best they seem to stay about the same, but to each their own with aging. I just thought your comment was funny since the proprietor of the business seems to vehement disagree with something you said was proven.
 
proven based on the opinions of people in this thread, i guess. "ages well" isn't the same as "improves with age." proven in this case means "doesn't get worse." or something. **** it, drinking five Nonna's this weekend!
Well, I don't really think the opinions of a bunch of raging homers should count for much on these items. Not that I disbelieve you guys or anything, the Nonna's were some of my favorites and I wish they'd do more.
 
Most people are talking about bottles that are what, 2 or 3 years old? I've never noticed much change on sours in that age range, though I'm not necessarily the best judge. They've only been bottling for maybe five years now, so I don't know if that's really long enough to definitively know how well they age.
 
I'm holding onto a few rustic caps. Batch 6 Bernice, batch 3 Cask 200. If anyone wants to get together and do a tasting id be game.
I really want to do this because I have like 50 bottles of SARA that I'm drinking too slowly. The problem was that buzzword has a stupid schedule.

Are they not brewing that again? That is one of my favs from them.
No, I'm pretty confident they have more—during a recent trip there, a friend and I saw the labeled 12-bottle boxes through the upper window while waiting outside.

Plus, the foudred version did compose 1/4th of the blend for Variations on a Theme (and the other components—wood-aged Anais (AKA Foudre #2), Four Legs Good, and I believe the correct batch of Lady in Grey—have all been released in bottles), so I'd say it's just a matter of time.

9 still got that nice hint of WA? I believe half of the blend of Nonnas 9 is Cellarman....not surprised it is tasting good.

I haven't had any of those hints in quite some time, as I felt that those notes from the bottle fell off fairly quickly. I don't think any will compare to the keg tapped Oct 2015 that was phenomenal and had a strong WA component.

That being said though, 9 right now is fantastic and I'm sure it's the Cellarman component. Drink up!
 
I've specifically found that a lot of SARA bottles at release are slightly under-carbed to what I want. I'm always a bit happier with 3-6 months on them, at least for non-fruited stuff.
