I want to do a 10 gallon batch for a wheat beer. I am thinking of splitting the batch with 2 different yeasts. I was thinking of German and American wheat styles.

Well, it kinda depends what you're looking for but, you can try any of these: White labs: WLP 300, 320, 380, or wyeast 3068 or 3333, or any number of other bavarian/belgian wheat yeasts or any other wheat yeasts.

What do you think of 1010 for American and 3056 for German style?
The thread police academy just graduated a hard working class. :)
 
I have used 1010 one time and my wheat came out terrible. Can't contribute it all to the yeast but I am steering clear of it for now.
