I have been doing full boil 5 gallon extract's, in my 8 gallon pot. I know you can get by with doing 2.5 gallon partial boils and adding the rest in the fermentor. If I wanted to do 2 -5 gallon batches of the same recipe and add different yeast is this possible? Im thinking I can just combine 2 extract kits into 1 5- gallon partial boil. Split that into 2 carboys and add the rest to get my 5 gallons each carboy. Or does something else come into play here? Doubling all the LME, DME, hops into a 5 gallon boil to then split cause any issues?

What you are planning will cause no issues. Late extract addition, at flame out or power down if you are electric, will reduce the chance of boil over with the extra extract in the kettle.
