I am going to do a 2 gallon batch of hefeweizen. i have wlp300, how much should i use out of the package?

This is my second batch of homebrew to date and i am doing an extract brew.

Is there a good site to calculate how much yeast to use for gallons?

You can use somewhere between 1/4 package and the whole thing. I'd probably use half the package and save the rest for a later brew although I have seen instructions to not. I've been doing that for some time now without any issues, even when storing the half packet for 6 months although I wouldn't recommend that long.
 
Welcome to the forum. I've been brewing 2.5 gallon batches for about 6 months and like to re-hydrate a whole package of yeast then pour about 3/4 of it into the wort. I always use a fresh package, don't want to take a chance just to save a few bucks. But that's just me- I tend to be really careful with cleaning and sanitizing to be absolutely sure my probability of success is as high as possible. Good luck!
 
I have been brewing 2.5 gallon batches almost exclusively for 5 years and I just pitch the vial if it is moderate to low gravity or make a viability starter with a liter of wort. On higher gravity, say 1.070 and above I make a 2l starter. It is very hard to overpitch, it will be fine. Relax and good luck.
 
Pitch the entire packet. Even pitching the entire packet you will still probably be achieving a pitch rate of less than 1 million cells/mL/°P, especially if you are using an older pouch of White Labs yeast. Yeast management is one of the most important aspects of brewing good beer and achieving consistency in your process. Of course there is more to yeast management than just pitch rate so be observant of best practices like oxygenating the wort and controlling yeast temperatures.
