What did i do wrong, 1 gal organic apple juice, redstar blanc, added 1.5 cup sugar. O ly fermented 2 days and stopped bubling. Did not get og but fg .990. Appears to already be done. Temp never got over 72. Tastes very dry. Very cloudy and very strong alcohol taste.

Do i need to rerack and sweeten. How can this be done already?
 
Very feisty yeast? At 2 days I would open it and give it a stir, CAREFULLY, so as not to get a carbonation explosion. You may have sugars at the bottom. Then again it might actually be done. I would think that's too soon but one never knows.
 
I was thinking too soon. But gravity reading says done. Taste good and alcohol seems up there. Shame i did not read og. Seems like am awefully fast ferment. I also did a melomel with other half of yeast pack, and it seems done at 8 days, fast as well. I think im going to re rack and sweeten as is very dry.

That will just make a higher ABV. It will still ferment to dry as yeast will eat all available sugars till they die due to alcohol poisoning (% is higher than they can handle). If you want sweet then let it age and finish on it's own. Then stabilize and backsweeten.
 
I pitched an entire pack of S-04 into a half gallon once, and it was done in 3 days. Lots of lees.
