That will continue to change for at least a year. I've made multiple BOMM's and short meads. They go through many serious changes over the first several months and up to the first year) probably long after that if they last that long!)
At bottling time, my short meads are amazing ! A few weeks later, they are almost undrinkable as the "hotness from the alcohol" and yeast flavors became very prominent. A month later, they tend to taste a bit more sweet, good to drink, but still young. After 6 months, they are awesome.
Even though the name BOMM implies it is a one month mead, trust me, it will be better at 6 months that it is at 1 month.
