This is why I cant have nice things. From brewing, to mushroom growing, to the style of tobacco I use.....this hellish heat has an effect on everything. What am I going to do? I plan to start my first batch of booze tomorrow and the weather calls for clear skies with temps in the 100's.

In an effort to battle the beast, I have bought yeast strains that are fairly tolerant to high temps (around 80), and plan to keep my fermenting bucket in the bathroom, on the tile floor, where it stays pretty cool.

Or am I gonna end up with nasty, crap smelling beer by the time this is over?
 
You can keep the fermentation temperature fairly consistent by using a swamp cooler. Find a container big enough to place your fermenter in (Rubber Maid trash cans or storage totes work great for this), and fill it with cold water. You can also toss in a couple ice packs to bring the temperature down further. Cover the whole thing with a damp towel or a t-shirt and direct the airflow from a fan across the container.
 
Also try Danstar Belle Saison dry yeast. Stuff works fine at really high temps.
 
A yeast strain tolerant to 80 is probably not ideal at 80.....it's likely to be estery and a bit hot. Drinkable, but not as good as it could be.

Your best options as temp control (eg. swamp cooler) or saison (most strains are happy when they're hot).
 
Definitely look into using a swamp cooler. You can use your bathtub and a towel as well.
 
For <$100 you can buy a ST1000 temp controller and get a chest freezer off Craigslist. Then you can stick your fermenter in it, set the temp you want and stand outside and laugh maniacally at the 100 degree weather.
 
+1 to the temp controller & cl freezer. I've picked up 2 freezers off cl for nothing & now have 2 chambers. Texas heat? .....pbblth
