    I brewed the Jim Palmer Vienna Lager kit from More Beer with 34/70 today. Pitched at 64 and plan to let it ride for 2 or 3 weeks, keg, then condition for a month or until a tap opens. This is my first attempt at this. Excited to see how it goes.

    It's funny. Heady Topper really is far removed from NEIPA by today's standards. To me its more of an unfiltered DIPA at this point. Bitter and Dank. Still delicious.

    I keg hop in a 1-gallon paint strainer bag or stainless "Keg Hop" cylinder all the time. Some have gone as long as 4 months with no ill effects to the beer.

    Aside from heartburn, I also get intestinal distress from hazy beers. It only took me a few years to put those coincidences together. Aside from the occasional Fiddlehead, clear beers for me from now on.

    I thought about that too, but it seemed to permanent. I also like the low tech aspect of the plastic wrap. Easily replaceable.
