    I just tried this recipe about 2 months ago. It turns out really bitter at first so you have to rack it a couple of times and let it clarify for a few weeks. Small batch yield for the crazy amount of rice it takes. You're right about the kick though. Mine turned out like rice liquor.

    This might be a dumb question, but when y'all are talking about fermentation temperature, are you referring to the ambient temperature of the room or the temperature of the fermenting wort? Also, which one tends to be warmer?

    Thank you guys for your help. My fermentation temperature is way too high for sure. Still not sure if its yeast esters or acetaldehyde that I'm tasting. Just called the local HBS and I'm going to take it in today for an expert opinion. I'll let y'all know what the verdict is.

    I wanted to better my craft. Reaching out to a worldwide community provides a greater wealth of knowledge than books, friends, my own experience... Its pretty cool to be able to post a question to a group of experienced brewers and have a response within a couple hours.

    Great point about the adjuncts. I'm thinking the hop addition should be pretty minimal also. Maybe just adding a small quantity of hops at the end of the boil for flavor and aroma?
