Keep releasing the pressure using the release valve until it gets to where you want it,
I brew very similar beers and serve them on nitrogen,
When I do I carbonate using 2 oz of sugar and that is perfect for the carbonation
If you want a trap that is all metal and not plastic morebeer has them, I just put mine together last week and am waiting on a chocolate hazelnut porter to finish in the secondary

The clarifiers(moss and whirfloc) allow the proteins to drop out of suspension when it is in the fermenter as well
Try Brewing a hefeweizen where you don't use it, it will always be cloudy

Less chance of infection. Boiling the wort kills the bacteria that exist in the water
If you do a partial boil and then add 2 gallons of water that haven't been boiled you run more of a chance of an infection from the not boiled water
In a full boil everything gets boiled

You can always buy a packet of dry yeast and put a couple of grains in each bottle and they will eat the sugar.
Don't worry about your beer being cloudy it doesn't affect the taste at all it is just an aesthetic.

Did you shake the carboy to mix the additional water with what you boiled before you took the sample
When I used to do partial boils once I forgot to and my OG was crazy high because the sample was pulling from the 3 gallons on the bottom of the carboy
