You are, of course, correct. I mixed up potassium metabisulfite and potassium sorbate. It retards the growth phase, it doesn't kill the yeast.

Cold crash and then use sulfates like potassium metabisulfate to kill the yeast. Basically, look at back sweeting wine and do the same process. Then be confused when it won't bottle condition. ;) This is true.
