    I dont usually use gelatin in a cali common but it wouldnt hurt. I dont think it is necessary at all.

    Was the rye malted or flaked? Did other judges confirm the flavor? Right now I'm leaning towards an inexperienced judge confusing a malty profile with diacetyl or at the most a yeast issue. But you finished a little dry for your recipe but that shouldnt be a big issue here.

    Should be fine. I dont usually even sparge if I do BIAB. Without BIAB i do notice a better quality if I tweak the sparge water and the mash water.

    I would get some nottingham and ferment cold (around 55F). But if you are going to use what you have then US-05 at around 60F.

    Head retention and carbonation are the usual concerns but the oils can affect the flavor. What specific adjuncts were you looking at trying?

    His wlp pack was old and he wanted insurance. My thought are probably that the wlp was old and stressed or he overpitched and hurt the lifecycle of the yeast but not enough details to say for sure.

    I agree with ditching the carapils, the other suggestions are a matter of personal taste but more vienna would probably be ok. I would probably add a flameout addition of .25 ounce of centennial for a little for flavor and aroma.

    You've got the gist of it. But just make sure you get between 60-70F for your wort.

    Did other judges comment on it as well or was it just one judge? Could be personal perspective or inexperience on the judges part. I'm a judge myself but you should always take it with a grain of salt unless you had multiple comments from other judges confirming diacetyl.

    I have found that my cali commons come out best with a short and cold (around 35F) for about 2 weeks

    How did you boil go? What is your set up? When did you pitch the US05, was it the same time as the wlp001 or later due to a stuck fermentation?

    Hop Schedule

    If you have a hop sock or mesh bag I would put the leaf hops in that and just toss the whole thing into the boil. If you dont have it just leave it with the rest of the trub. It will settle to the bottom during fermentation.

    I dont remember exactly what the judges notes were but I remember both judges and other HBT members saying the liberty hops added a slight spice and gave the beer more depth and complexity.

    You will maximize you load bearing and reduce wobbling/bending during movement if you take some 1x2s and run them at a 45° angle from the side wall supports down to your base supports. You can do the same at the top of you really want to make it strong but I think just doing it at the bottom...
