    They are microscopic. There are literally millions in there. You can grind, pound, smash etc. and still have plenty of viable cells to ferment with with no worries.

    The rice yeast balls include the fungal saccharifiers. No additional enzymes required. And for the record I have cultured my yeast balls on media and they contain Rhizopus oryzae for saccharification. They aren't "just yeast".

    Pure conjecture but I can think of a few possibilities. Not enough air exposure, too sterile, high enough alcohol it killed any beasties. A manual introduction of acetobacter would help.

    Other people have posted much less luck than you have had with the long grain. It doesn't hurt to give it a shot but i wouldn't give up on rice wine if it didn't turn out great.

    He was shot!?!? poor pup! He is a handsome devil though. I bet he will turn out to be a good pup with some love and care. Patience. May be rough for you as a first dog but those can be the ones that pay off the most in the long run.

    There used to be a big thing around the nets about self infusing vodka with bacon but I didn't pay too much attention to it. I have done Vodka with vanilla beans myself and it turned out great.
