    Is there a list of big krausen yeasts that tend to require blow off tube?

    Is that picture of the Star Gazer? This is the beer that inspired me to post the question. The K97 made a nice yeast deposit on the top of my fermentation chamber and the lid of my big mouth bubbler had it's own yeast cake on top of the fermenter!

    Wine kit, missed the nutrient addition mark at 1.040, currently at 1.020, should I bother?

    I was supposed to add nutrient in this wine kit between 1.050 and 1.040, it is currently at 1.020(It's a chardonnay). The yeast is EC-1118 so I feel it most likely does not need the nutrient. No rhino fart smell coming from must either so I assume the yeast is happy. So do I add the nutrient, or...

    I was thinking D47, too bad I used my last pack a few months back. Ended up going with the EC-1118 after the SO verified she like really dry wine(I fell victim to the 50-50-90 rule, with a 50-50 shot of picking the right option I have a 90% chance of getting it wrong!). Thanks for the advice...

    As the title states, which yeast would be better for a chardonnay? The EC-1118 came with the kit, but from past experience it seems to strip a lot of the flavors away and go very dry, at least when I have used it on ciders.     The krausen dropped yesterday and my Tripel is now hanging in my 5 gallon carboy. My large carboy is now ready for the big brew day on May 1st!

    Basically since the instructions called for it, and I wanted to see what the deal with using a secondary is, figured this was the beer to try it on. Also I need the larger carboy for an upcoming brew, so I figure since headspace won't be an issue I can age the beer in my empty 5 gallon carboy.

    Thanks! I have my next brew warming up to boil as I write this so either way this one was going to get taken out of the fermentation chamber. I'll give it another week before I worry about checking gravity.

    It looks like I had somehow over-carbonated the keg, though it poured fine at first. I have let the pressure off and it has been pouring better. I'll keep the tips listed in mind. Thanks!
