    Sweetening a beer

    You can easily add the lactose when you bottle or keg. In fact some prefer to add then vs boil. Which works better is likely like all brewing processes we use....just a matter of personal preference :)

    Your beer will be fine. Let it sit for a week or 3. Some yeast strains work faster than others and some floc better than others. If still cloudy after a few weeks then cold crash it for a day or 2 if u can.

    Airlock activity is a good sign of fermentation it is not what you should use to determine if your beer is finished. Seals leak. When a lid seal leaks sometimes you see no activity. The lack of activity does not mean fermentation is not taking place. Take a gravity reading a couple days in a row...

    You may have not only captured yeast you may have captured some bacteria :D Do a small one gallon batch to start with and only use equipment you do not mind infecting.

    I too started with the charlie P zap zap bucket set up to sparge. I have also tried BIAB and mashing in a cooler tun. The cooler tun is my preferred method. Holds temp better than mashing in a pot for the bucket and BIAB methods and does not require lifting a heavy grain bag. I also get better...

    I have used the brewers best extract. It comes in a 4oz bottle. Dump the whole bottle in. :)

    Adding chocolate

    I add coco powder right to my mash for an oatmeal chocolate stout I brew a couple times a year. Another option is to use chocolate extract and add when kegging or bottling.

    If you want to use up some nugget make a dipa with all nugget. It will come out tasty. Troegs brewing company makes one called nugget nectar that is outstanding.

    My favorite way to extract lots of hop flavor n aroma is to do a hop stand. Add more hops at the end of the boil and let your brew sit for 20-30 minutes before you chill.

    Chocolate extract in secondary

    No need to use a secondary to add the chocolate extract. Add it to your sanitized keg and rack on top of it or if bottling, add to the bottling bucket with your priming sugar.
