What is the best way to add chocolate to my homebrew?

I tried "Southern Tier Choklat".
The chocolate flavor and aroma were AMAZING!

How do I add it without having the downfall of the oils in the chocolate?

I know about cacao nibs but I know people have added actual chocolate to their beers. How?

I put 2OZ in a 1Gal batch and it was there, but not very pronounced...12OZ should get it there for your 5G batch..I added it right at flame out..By volume, not weight..;)
 
I add coco powder right to my mash for an oatmeal chocolate stout I brew a couple times a year. Another option is to use chocolate extract and add when kegging or bottling.
 
I have used the brewers best extract. It comes in a 4oz bottle. Dump the whole bottle in. :)
 
What's the difference in chocolate character when you mash the chocolate powder vs when you throw it in at the end of the boil?
Also...
Will the wort supplement for the sweetness desired after the fermentation since I'll be using bittersweet powder.

That's where the brewer comes in. I love dark and milk chocolate. For sweeter chocolate beer mash higher and use more crystal malt and/or other unfermentable sugars such as lactose to leave residual sweetness to play with the cocoa character. For less sweet chocolate beer mash lower and use fewer unfermentable sugars.
 
If I want actual chocolate flavor, I add actual chocolate with about 5 min left in the kettle. I've used everything from baker's chocolate to milk chocolate and they've all worked out great.
 
To bring out the chocolate flavor, add a little vanilla extract(pure) to your wort at flameout......maybe two teaspoons.

To bring out the chocolate flavor in your finished beer, add a little pure vanilla extract at flameout.....maybe two teaspoons. Vanilla enhances the chocolate flavor.
