    US-05 @ 79F. What off-flavors to expect

I used US-05 back earlier this summer and the room I brew in was getting up to about 78° during the day. It prompted me to build a fermentation chiller, but to be honest, I haven't really noticed a difference between the batch that hit 78° and subsequent batches that have fermented around 65°...

Meaning of oil percentages in the hop wiki

It was my understanding that hop chemistry is split into 2 distinct parts, bittering and flavoring/aroma. Bittering is described by Alpha and Beta acids, the most important being the percentage that is made up Cohumulone. Higher Cohumulone supposedly has "harsher" bittering. (I don't think...

    Can I legally do this?

But call from a payphone, don't give your name and don't give the location of the event. Yes, I'm that paranoid about state liquor agents.

Gambrinus Honey Malt steep - did I just waste a pound of this?

I was doing an extract with specialty malt steep this weekend and I used a pound of Gambrinus Honey Malt and a half pound of Crystal 20L. I specifically asked the clerk at my LHBS if the Honey Malt had to be mashed and he told me I could steep it. Tonight I was reading the...

Sound good. But read this post about how long to dry hop.

Add all LME at 15 minutes (late addition)

Then let the debate begin... According to this post by SumnerH, "Hop utilization is independent of wort gravity, and the impact (if any) of late extract addition on IBUs is much, much smaller than what software will calculate." The sources that he cites say that late additions mostly affect...

    Controlling Fermentation Temperatures - Poll

I use a fermentation chiller. It's recycled cardboard glued together and lined with a roll of fiberglass insulation. I cool it using frozen water in a 2 liter soda bottle. It works pretty good for the $13 it cost me.

    lme vs dme?

I've used both and there was no difference in taste in the finished beer. For me, the main difference is the cost. I can buy bulk LME from my LHBS pretty cheap. I thought about mail ordering a 33# Breiss LME carboy, but I'm worried about storing it. It would take me 2-3 months to use up 33...

    Diastatic LME + specialty grains

I've been brewing using LME + specialty grain steep. I notice that AG recipes include specialty grains in the mash. I use United Canadian Pale LME, which is diastatic. Could I do a partial mash using this extract? Are there any sugars left in carmelized or roasted grains that get...

Suggestions to spice up a Pale Ale

Yeah, I recently did a couple SMaSHs to compare Simcoe and Columbus, but it was only about 35 IBU. I've done 4 APA SMaSHs in a row now and I really liked them all. I'm getting ready to do another APA. I'm starting with simple APA recipe in the 45-50 IBU range and I wanted to try to add to the...

Suggestions to spice up a Pale Ale

I'm planning on brewing a Pale Ale in the 40-50 ibu range and I was wondering what ingredients could be used to give the flavor just a little more complexity? (I'm thinking of bittering with either Simcoe or Columbus)

    IPA Recipe

According to this link, adjusting the amount of hops based on the specific gravity of the boil not necessary. [https://www.homebrewtalk.com/f37/late-addition-hop-utilization-188394/#post2186025] According to that very convincing post, the specific gravity of the boil mostly only affects the...

    Midwest/Southern Beers?

Well, at least KY has some of the cheapest beer prices around, at least in Northern KY vs. Ohio :) You got to do your homework. Beer Advocate has a travel guide. Also do a web search for local brew clubs. They usually have info where to get the best beer locally.

AHS Vs. Morebeer two different grain steeping instructions

Extraction of tannins from the grain husk is dependent on temperature. Although it probably won't make a noticeable difference, the 155° temperature would be better.

    Brewing with "not grain"

If you don't use grains, then you are not brewing a 'true' beer anymore. But I guess corn and rice are types of grain :)
