Possible to have too much attenuation?

So I fermented an IPA 1.066 OG. I just checked the gravity after 1.5 weeks to find it is now 1.010. I fermented using Wyeast 1332 Northwest Ale. Is it possible to have the attenuation too high?

Best Yeast for a Wee Heavy

What's your experience with the temperature and 002?

    Lager Fermenter space.

Ah. I see now I guess ill do some reading on diacytel rest debates.

    Lager Fermenter space.

If I fermented for two weeks or so, racked to a keg for conditioning. Is the FG reached in that first two weeks? I thought the beer was transferred to the lower lager temperatures when the gravity was about half way or so. If that is the case isn't there a concern about CO2? Or when other...

    Lager Fermenter space.

I plan on picking up a kegarator after Christmas. So after primary, and a diacytel rest if I choose to do one, I could rack to a keg and lager in the kegarator? I guess while serving my ales?

    Lager Fermenter space.

So I wan to start lagering. I have a chest freezer with the johnson temp controller I've been using to ferment ales. My dilemma is if I do lagering, my space is going to be occupied. Any alternative ideas for doing lagering, without taking up the space I need to ferment ales as well? Could I...

    Fermentation flavors

Fair enough. Ill give it time. It was a two gallon batch. With the age and its calculated viability I pitched two wyeast packs. It was slightly above the recommended pitch rate. I don't think underpitching was done. I injected pure oxygen through a 0.5 sinter stone at 1.2 lpm for 40 seconds...

    Fermentation flavors

Just checked the progression of my stout. It finished at 1.012 from 1.063. I started fermentation 6 days ago. Anyway, I get this odd bitter flavor. I'm guessing it's acetaldehyde (kinda like the sharp bitterness of a green apple) or could it just be the esters out of control? I oxygenated...

    made a grain roller

Guess I'll give conditioning a try. I still need to build a stand. Something easy to put away. Still live in an apartment and I don't see the wife taking kindly to a mill in the dining room.

    made a grain roller

Turn ground and polished. Scrap from a previous job that had been weathered and no longer "polished". On the wet milling, wouldn't that cause a lot of build up with the dust and all? And how does it affect the grain in terms of brewing performance?

    made a grain roller

I know it took a long time to post this But I just haven't had time til now. Getting married can really put a damper on brewing. :-) Anyway yes self machined rollers. Here's some pix of the crush. I'm wondering is it too shredded? I'm thinking if it is I'm going to need to drive both rollers...

    yeast starter exploded

I didn't realize fermcap would keep the krausen under control. Ill have keep that in mind next time I try a starter. I guess it'd be good to keep boil overs from happening. Its just one heck of a juggle keeping the heat just right on an Erlenmeyer flask to keep it boiling but not boiling over.

    yeast starter exploded

I put wlp001 in a two.liter starter on friday afternoon. Left it on the stirplate and went away for the weekend. I returned to find that it had overflowed on the counter. It looked like quite a bit of dry yeast on the stir plate. Still safe to pitch the starter.? Did I lose too many cells...

    made a grain roller

I tested out this contraption and it seemed to really shred the husks. I noticed that with only one roller being driven, the grains go through and it takes a bit of the grains to go through before the undriven roller catches, but everything is shredded. I haven't set the gap yet, I still need to...

    whats going on here experts?

So I was checking the hops again...well it seems I had some worms that were boring into the stems...they almost broke the vine in half where true went in, and left this brown stuff where they made their hole. From the point on the vine where they bored in, the rest of the vine started to die...

    whats going on here experts?

I tried posting about this earlier. Anyway, here are some pictures. I left my hops for two weeks and came back to these not so great looking cascades. The other varieties area fine. This is just limited to the cascades. I thought spider mites maybe. Some of the cones that were still develooing...

    i dont like mites

Is it safe to spray the plant with a pepper, garlic, soap spray after the cones have formed?
  18. B

    i dont like mites

So the bottom leaves of the cascades are turning yellow. I've got tiny holes forming in the other leaves and little webs here and there. I had mites last year. What's the best way to keep them under control? I already have cones. Is soap spray alright to use since I have cones? Or maybe throw...

British Yeasts, Fermentation Temps and Profiles, CYBI, Other Thoughts...

..Does anyone else experience odd flavors after bottle conditioning with WLP002? I had a Brown Ale that was just awesome (great hop aroma and a full malt backbone), at bottling it was as described. Three weeks later I've got this bitterness taste and all the hop aroma has left and malt...

Sorry to chanegt he subject a little. But does anyone have a 3 gallon better bottle and this fridge...and could i fit it in their to ferment in? It looks like maybe the door ridges might hit the bottle since it's square. Just curious. If it fits, I'll get this fridge and eventually change it...
