    Beers that age well?

Towards the end of this year we are spawning a new member of the household and my brewing time will be severely impacted for several months after that. I would like to start to "Stockpile" between now and then. I've got a 3 keg system (2 on tap and one spare keg). Which is great but I...

How do I know if my beer is really any good?

My favorite feeling in homebrewing is seeing someone mosey on back up to the tap tower and pour themselves another. Thats when I know I've succeeded. Not only is it good enough to have seconds but they're comfortable enough to just go pour it themselves (but gosh darn if they don't know how to...

    Fixing a Stout finishing @ 1.031 FG

Doesn't look infected to me. Looks kind of like floating yeast rafts. Most infections look more white/bubbly thingys with tendrils going to other white bubble thingys. I pitched a packet of US05 dry yeast directly on my stuck fermentation and the airlock started to slowly bubble about 48 hours...

2nd batch. Help me tighten up

I just recently started racking from kettle to carboy with a racking cane and its been MUCH easier to avoid a lot of the trub at the bottom of the kettle. Much easier than trying to pour out 5.5 gallons of wort from a kettle into a funnel too.

    WA booze ripoff

One of the few things I missed about California was that you could buy liquor in the Grocery Store, Gas Station, etc... it was great. Here in Texas some counties don't even have liquor stores. Liquor can only be sold IN liquor stores and they're ALL closed on Sunday. Also you can't buy beer...

    Fixing a Stout finishing @ 1.031 FG

I feel your pain. I'm not sure what happened but i've got a sweet stout that just won't drop below 1.020 and i started at 1.050. Its very sweet. It was supposed to drop to 1.015. I've got the room slightly warmer and I also pitched a old-ish packet of Nottinham thats been in the fridge for a...

I really have no idea what I'm doing (fermentation chamber build)

I did. For some reason the wood wouldn't fit together smooth. Waiting 12 hours now before I turn it on to see how well it hold temp.

Brown Ale low gravity reading after 3 weeks

I just tested a stout I started a few weeks ago and found it was STILL at 1.022. So I rehydrate some Nottingham yeast and pitched that into the beer. Hope NG for the best. I suggest you do the same.

I really have no idea what I'm doing (fermentation chamber build)

Picked up a cheap 4.6 cubic foot mini fridge off CL. I saw a few collar builds and it looked SO SIMPLE. What I failed to remember was how awful I am at everything wood and construction. You would think making a square out of finish quality 2x4s would be simple... But I could not get it flush...

Brown Ale low gravity reading after 3 weeks

At this point I would just toss something neutral like nottingham in there and let it ferment down or repitch with the same yeast you started with. There's a reason they call nottingham yeast the "Backup plan". You keep a few packets in your fridge for just this kind of occasion. I would NOT...

American Lager Florida Irish Redfish Lager

I just bought a mini fridge to turn into a Lagerator and this looks like it would hit the spot for the start of summer. Have you made any changes since you first tried this one out? Anything you would do differently?

    Trying to raise my OG

This is great advice. Had I taken a pre-boil gravity reading I would have known I was 15 points short and would have added that spare pound of DME that I had laying around to bring it up a bit.

Brew times getting shorter? Sign of the times?

Wife is gone and I'm stuck home with the 4 and 6 year old but still taking my time to brew this afternoon. It helps that it's beautiful out and my 6yo just discovered video games too. A few years ago I wouldn't be able to do this.

    Question about bulk grains

    That's probably why they haven't.

    Question about bulk grains

I wish the local club here did that. I haven't joined but from what I see and have asked on their facebook page they just have discounts on food at the local brewpubs and breweries and LHBS. That would seem like a really huge help. How big is that local brewery? It seems like too small and...

Filling Bottles With a Picnic Tap?

Yup! You're in luck! https://www.homebrewtalk.com/forum/threads/we-no-need-no-stinking-beer-gun.24678/ We no need to stinkin' beer gun! Also I've used a larger stopped to do the same thing for growler fills as well.

Anyone else a Ham Radio Operator?

Good luck listening to anything interesting anymore as far as LEO goes. All our systems around here in north texas switched to digital and digital encrypted. The ham radios make terrible scanners but they're okay in a pinch to listen to stuff. Hopefully you'll find some local repeaters with...

Anyone else a Ham Radio Operator?

You left out one of the best out there https://hamstudy.org Very easy flashcards to use. Explanations on almost every question. Tracks your progress and will hit you with missed questions more frequently than ones you get right, BUT if you get too many in a row wrong it starts throwing some of...

Brew times getting shorter? Sign of the times?

I enjoy it a lot. But its a choice between a short brewday and not brewing at all. Thats part of why I had to take a 4 year break because we had a 1yo and 3yo running around and being unable to help out for 4-6 hours (plus another couple hours of yardwork) on a Saturday when we both have things...
