why did i get hop burn?

ALDC It actually says hop creep...which I confused for hop burn...I stand corrected.

why did i get hop burn?

Sometimes it can take several weeks for the hop burn to mellow out. There is also a product that More Beer sells, ALDC that supposedly helps reduce hop burn in hop forward beers. I use it for it's other purpose, as it also helps prevent diacetyl.

    Norovirus!

Norovirus is no fun. Every year my extended family rent a place on Cape Cod, this past summer we had 14 of us, 9 adults and 5 kids under 5. We got 3 good days in, then the night of day 3 started the nightmare. One of the kids got sick, then I was throwing and going all night, as was another...

    Dubbel trubbel?

I saw something recently that some of the liquid candi sugar products out there have cut corners and are using high fructose corn sugar as their main ingredient these days. So keep an eye out for that if it matters to you.

    Rate your Brew Day Performance

Regarding diacetyl, are you cold fermenting and then have a way to raise temp for diacetyl rest? If so, try starting the d-rest earlier. I try to do it when the beer is 80% fermented. For example, a 1.050 beer that is expected to finish at 1.010, needs to ferment out 40 points. 80% of 40 is...

Question regarding Beersmith Water Profile use.

Someone has watched too many Sam Adams commercials..."From Boston" :)

Question regarding Beersmith Water Profile use.

For me, as I also have hard water, I just buy jugs of distilled water at the store. Or during Covid, I signed up with a water company and had 5 gallon jugs of DI water delivered every 2 weeks. With distilled you are starting with water that has zeros across the board, while RO has a slight...

Scorching during step mash. Anvil 10.5

I have had a little protein and grain dust stuck to the bottom that does get browned, but recently did a Grodziskie which was 100% oat smoked wheat malt and even with rice hulls, the bottom was so gunked so and scorched during the mash even at just 60% power with 120v, that I got an E3 error...

    Another yeast pitch question...and D-rest

You could try adding ALDC at yeast pitch. It's an enzyme that reduces diacetyl One dropper full per 5 gallons. It also works great to reduce hop creep in dry hopped beers. While I have never really had an issue with diacetyl in my lagers, I started using it as an extra precaution last year...

NZ Pils - Category for competitions (2025)

Yeah if it were me, I would definitely throw it in both for the heck of it. Did that with a Pre-Pro Porter once in the past, entering it as Pre-Prohibition and as an English Porter, it took gold in both. So you never know! I know a guy who entered his Baltic Porter as a Schwarzbier and we...

NZ Pils - Category for competitions (2025)

I think in should go in 34B Mixed Styles. Per the 2021 style guidelines, 34B covers a beer that is a blend of two style;, a variation of an existing style using non-traditional method or process, ie dry hopping; a variation of an existing style using non-traditional ingredients, ie yeast with...

Welcome to the hobby! Definitely nothing wrong with plastic buckets, unless they get scratched up inside, which can hide bacterial. I have been brewing for over 14 years now, plus some time in early 90's when I dabbled with extract brewing, and still use plastic carboys and buckets. I do...

    Yeast efficacy

Was the yeast an English yeast by any chance? They tend to be chunky and can flocculate out quickly if not using a stir plate to keep them moving. I would swirl the starter every hour or so to keep it moving, give it another day and maybe check the gravity.

Opinions on my second ever brew recipe?

Cold crashing would be after the 2-3 weeks. Cold garage would work for a cold crash, as long as temps don't drop below freezing. I use a fridge to do my cold crashes and lower the temp like 4 degrees every 12 hours. There have been some that say cold crashing right from 60's to 40's can...

Opinions on my second ever brew recipe?

My opinion, first on the recipe, there is zero need for Aromatic malt in a Helles and 1 lb of CaraHell seems like a lot. I would go with 9.5 lbs Pilsner, 0.5 lb of CaraHell. IBUS are a touch high for a Helles, I like mine to be down around 25, but to each their own. Your mash schedule is...
