I recently attempted my first kettle soured Berliner. It's currently in the fermenter on sac. I used 5335 for the kettle sour and after 3 days could not get the PH level below 4.

This is actually VERY helpful! I didn't take into account water evaporating and sugars bit evaporating. Thus far I have only measured from the brew kettle once everything is gathered. So I take it about 6 gallons for prevail then at the very end after my 60 minute boil.

At this point I use a direct fire rims, my last batch I wash shooting for an og of 1.075 and it actually came out at 1.080 so I'm curious about the efficiency math works.
