- A little more hoppy (by choice), but I think it\\'s pretty close!
Yeast: SafAle S-04
1/3 oz Nugget, boiled 60 min (13.3% α acid)
1/2 oz Cascade, boiled 15 min (6.9% α acid)
1/2 oz Cascade, dry-hopped
6 lbs. Pilsen Light Dry Extract
1/4 lb Honey malt
1/4 lb Smoked malt
1/4 lb Biscuit malt
1/2 lb Caramel 60 malt
1/2 lb Chocolate wheat
1 tsp Irish moss
The grains are steeped at ~155 ˚F for 30 minutes in 3 gallons water. Grains are removed and water is brought to a boil. Dry malt extract and Nugget hops are added. The wort is boiled for 45 minutes before Cascade hops and Irish moss are added. After 15 more minutes (60 minutes total), the wort is chilled and diluted to 5 gallons with more water. The yeast is pitched. After fermentation slows (about 6 days) the beer is racked to a secondary with Cascade hops in a hop bag and let clear for about two weeks.
The hop bitterness is present, but actually not too strong. I'm glad I went a bit higher on IBU than Empyrean lists, but I generally like my beers on the slightly more hoppy side. Color is just about right, a little darker than Empyreans, but not too far off. The FG came out too low, maybe because I can't control temperature in my apartment that well, so the residual sugar is a bit low, and the mouthfeel is a little watery, but I don't think drier is a bad taste for this beer. The alcohol content seems to be just about right despite the dryness. Biscuit flavors are just right. Honey flavors are good, mild, but the finish is predominately honey and hops, so I dont think more is needed. The smoke flavors are subdued, maybe a little less would be better, but not by much.
