About 3 years ago I purchased a Muntons Connoisseurs Range Bock Beer kit. I just got around to doing anything with it tonight.

Included with the kit is a packet of dried yeast. After so long, will it be any good? Would anyone have any idea what kind of yeast it is?

I have a starter of PacMan yeast that I stepped up from a sample taken from some Rogue Dead Man's Ale, would that be a good yeast to use with a Bock Beer extract?

If that's a can + sugar kit (as currently sold) it's probably Munton's standard yeast. That yeast is selected for low attenuation, otherwise the beer gets too dry. It is probably usable, but if you are going to make the kit with DME rather than sugar, I'd go with the PacMan.
